Recipe: Grilled vegetable wrap

Yesterday we were looking on the internet for some easy and healthy recipes for lunch and we found this one. We tried it and it was delicious so here's the recipe. Hope you like it too!

serves 4

Ingredients:
- 2 zucchini, cut lenghtwise into 1/4-ich slices
- 2 teaspoons olive oil
- black pepper
- hummus
- 4 pieces whole-wheat wrap bread
- toasted pine nuts
- 1 red bell pepper
- spinach
- 1 red onion
- Fresh mint leaves

Directions:
- Preheat the grill or grill pan over medium heat
- Brush both sides of the zucchini slices with oil and sprinkle with the salt and pepper
- Grill until tenter and slightly browned, about 4 minutes per side
- Spread the hummus over each piece of bread and sprinkle pine nuts on top
- Top with zucchini, red bell pepper, spinach, onions and mint
- Roll each of them up
